What is right temperature for the best egg quality and freshness?

Eggs may look simple, but they are delicate. The shell is porous, which means eggs can lose moisture, absorb odours, and lose freshness if they are not stored properly.

In India, refrigeration is the safer and better option. Room temperature in many Indian homes can easily cross 28–35°C, especially during summer. Warm temperatures reduce egg quality faster. Refrigeration slows it down.

For maximum freshness and safety, eggs should be stored in the refrigerator at 0–4°C as recommended by the United States Department of Agriculture (USDA). (https://www.fda.gov/food/buy-store-serve-safe-food/what-you-need-know-about-egg-safety)

USDA advises that refrigerated eggs should not be kept out for more than 2 hours. 

When cold eggs are taken out and exposed to warm air, they can “sweat” due to condensation. This moisture can make it easier for bacteria to populate and move through the porous shell, so eggs should not be left outside for long.
